Spam Fried Rice Recipe
Serving Size: Serves 4-5
Ingredients:

can of Spam, diced (about 340g)
- 300g
(2 1/2 cups) frozen mixed vegetables (corn, carrots, peas)

servings of cooked rice (about 4 cups or 800g)

spring onions, sliced

eggs, scrambled

tbsp (15ml) dark soy sauce

tbsp (15ml) light soy sauce

Instructions:
- Prepare
the Sauce: In a small bowl, mix 1 tbsp each of dark soy sauce, light
soy sauce, and oyster sauce. Set aside.
- Scramble
the Eggs: In a large skillet or wok, scramble 6 eggs until just set.
Remove and set aside.
- Cook
the Spam: In the same skillet, add the diced Spam and cook until it
starts to brown.
- Add
Vegetables: Add 300g of frozen diced vegetables to the skillet and
cook until they are heated through.
- Combine
Ingredients: Add the cooked rice to the skillet, breaking up any
clumps. Pour in the sauce and mix well.
- Add
Eggs and Spring Onions: Return the scrambled eggs to the skillet and
add the sliced spring onions. Toss everything together until well
combined.
