    • 2 cups (200g) shredded pizza cheese
    • 1 cup (50g) shredded lettuce
    • 1 tablespoon (15ml) vegetable oil or cooking spray

    • Heat the cooked chili con carne if it’s been refrigerated.
    • Shred the cheese and lettuce.
  2. Assemble the quesadillas:
    • Place a tortilla on a flat surface. Spread 1/2 cup (125g) of chili con carne evenly over half of the tortilla.
    • Sprinkle 1/2 cup (50g) of shredded cheese over the chili con carne.
    • Add a handful of shredded lettuce on top of the cheese.
    • Fold the tortilla in half to cover the filling.
  3. Cook the quesadillas:
    • Heat a large skillet over medium heat. Add a small amount of vegetable oil or spray with cooking spray.
    • Place the folded quesadilla in the skillet. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
    • Repeat with the remaining tortillas.
  4. Serve:
