cheese
- 1 cup (50g) shredded lettuce
- 1 tablespoon (15ml) vegetable

- Heat the cooked chili con carne
if it’s been refrigerated.
- Shred the cheese and lettuce.
- Assemble the quesadillas:
- Place a tortilla on a flat
surface. Spread 1/2 cup (125g) of chili con carne evenly over half of the
tortilla.
- Sprinkle 1/2 cup (50g) of
shredded cheese over the chili con carne.
- Add a handful of shredded
lettuce on top of the cheese.
- Fold the tortilla in half to
cover the filling.
- Cook the quesadillas:
- Heat a large skillet over medium
heat. Add a small amount of vegetable oil or spray with cooking spray.
- Place the folded quesadilla in
the skillet. Cook for 2-3 minutes on each side, or until the tortilla is
golden brown and the cheese is melted.
- Repeat with the remaining
tortillas.
- Serve:
- Cut each quesadilla into wedges.
Serve immediately with a side of shredded lettuce and your favorite
