Danish Apple Cake Recipe

  • 4 kg (8.8 lbs) Granny Smith apples
  • 1 liter (4 cups) custard
  • 500 g (18 oz) Arnott's Family Favorites biscuits (or any other plain biscuits)
  • 150 ml (2/3 cup) water for apple boiling

  1. Prepare the Apples: Peel the apples and remove all green bits. Place them in a pressure cooker with 150 ml (2/3 cup) water. Cook on high pressure for 15 minutes.
  2. Drain and Cool: Once the apples are cooked, drain the water using a sieve. Let the apples cool overnight in the refrigerator.
  3. Ground the Biscuits: Place the biscuits in a food processor and grind them into fine crumbs.
  4. Assemble the Æblekage: In a serving dish, start with a layer of ground biscuits, followed by a layer of stewed apples, then a layer of custard. Repeat the layers until all ingredients are used, ending with a layer of custard.
