Stew Recipe
Ingredients (Serves 4)
- Main Ingredients:
- 1 can (340g) spam, diced
- 300g (10.5 oz) sausage, sliced
- 200g (7 oz) rice cake (tteok)
- 2 packs (200g each) noodle cakes
- 500-700ml (2-3 cups) water
- Sauce:
- 1 tablespoon (15ml) light soy
sauce
- 1 tablespoon (10g) gochugaru
(Korean chili flakes)
- 1 tablespoon (15g) gochujang
(Korean chili paste)
- 1 tablespoon (15ml) mirin (sweet
rice wine)
- A pinch of black pepper
- 3 tablespoons (45g) minced
garlic
- 1 tablespoon (12g) sugar
- 1 tablespoon (15ml) ketchup
- 1 tablespoon (10g) dasi powder
(Korean soup stock powder)
- Vegetables:
- 1 cup (150g) bok choy, chopped
- 1 cup (150g) cabbage, chopped
- 1 onion, sliced
- 5 spring onions, chopped
Instructions
- Prepare the ingredients: Dice the spam, slice the
sausage, and chop the vegetables.
- Assemble the stew: In a large pot, add the spam,
sausage, rice cakes, bok choy, cabbage, onion, and spring onions.
- Make the sauce: In a small bowl, mix together
light soy sauce, gochugaru, gochujang, mirin, black pepper, minced garlic,
sugar, ketchup, and dasi powder.
- Cook the stew: Pour the sauce over the
ingredients in the pot. Add 500-700ml (2-3 cups) of water, enough to cover
the ingredients. Bring to a boil over medium-high heat, then reduce to a
simmer. Cook for 15-20 minutes, stirring occasionally, until the rice
cakes and vegetables are tender. Add the noodle cakes in the last 5
minutes to prevent them from getting too soggy.
- Serve: Ladle the stew into bowls and
enjoy while hot!
Tips and Substitutes
- Vegetarian Option: Replace spam and sausage with
tofu and more vegetables like mushrooms or zucchini.
- Gluten-Free: Use gluten-free soy sauce and
check the labels of gochujang and gochugaru.
- Less Spicy: Reduce the amount of gochugaru
and gochujang or replace with milder chili pastes.
- Broth Substitute: If you don't have dasi powder,
use vegetable or chicken broth cubes.
