Teriyaki Salmon & Fried Rice Recipe

Serving Size: Makes 4 servings.

Ingredients:

  • For the Salmon:
    • 4 salmon fillets (serves 4)
    • 1/4 tsp salt
    • 1/8 tsp pepper
    • 1 tbsp mirin
    • 2 tbsp olive oil
  • For the Teriyaki Sauce:
    • 4 tbsp soy sauce
    • 4 tbsp water
    • 3 tbsp mirin
    • 1 tbsp sugar
    • 1/2 tsp ginger, minced
  • For the Fried Rice:
    • 4 servings of cooked rice (approximately 4 cups or 800g)
    • 1 carrot, diced
    • 5 spring onions, diced
    • 3 tbsp teriyaki sauce (reserved from above)

Instructions:

  1. Prepare the Teriyaki Sauce: In a bowl, mix soy sauce, water, mirin, sugar, and minced ginger. Set aside.
  2. Cook the Salmon: Heat a non-stick skillet over medium-high heat. Add the salmon fillets, skin side down, and cook for about 4 minutes on each side or until cooked through. Pour the prepared teriyaki sauce into the skillet with the salmon, reserving 3 tablespoons for the fried rice. Let the sauce simmer and thicken for about 3-4 minutes, coating the salmon evenly.
  3. Prepare the Fried Rice: In a large pan, heat a bit of oil and sauté the diced carrot until slightly softened. Add the cooked rice, spring onions, and 3 tablespoons of the reserved teriyaki sauce. Stir-fry for a few minutes until everything is well combined and heated through.
  4. Assemble and Serve: Serve the teriyaki salmon over a bed of fried rice. Drizzle with extra teriyaki sauce if desired.

Tips and Substitutes

  • Vegetarian Option: Substitute tofu or tempeh for the salmon and use vegetable broth in the teriyaki sauce.
  • Gluten-Free: Use tamari instead of soy sauce to make the dish gluten-free.
  • Extra Veggies: Add peas, bell peppers, or broccoli to the fried rice for extra nutrition and color.
