fillets (serves 4)

tbsp soy sauce
- 4
tbsp water
- 3
tbsp mirin
- 1
tbsp sugar
- 1/2
tsp ginger, minced

the Fried Rice:
- 4
servings of cooked rice (approximately 4 cups or 800g)
- 1
carrot, diced
- 5
spring onions, diced
- 3
tbsp teriyaki sauce (reserved from above)
Instructions:
- Prepare
the Teriyaki Sauce: In a bowl, mix soy sauce, water, mirin, sugar, and
minced ginger. Set aside.
- Cook
the Salmon: Heat a non-stick skillet over medium-high heat. Add the
salmon fillets, skin side down, and cook for about 4 minutes on each side
or until cooked through. Pour the prepared teriyaki sauce into the skillet
with the salmon, reserving 3 tablespoons for the fried rice. Let the sauce
simmer and thicken for about 3-4 minutes, coating the salmon evenly.
- Prepare
the Fried Rice: In a large pan, heat a bit of oil and sauté the diced
carrot until slightly softened. Add the cooked rice, spring onions, and 3
tablespoons of the reserved teriyaki sauce. Stir-fry for a few minutes
until everything is well combined and heated through.
- Assemble
and Serve: Serve the teriyaki salmon over a bed of fried rice. Drizzle
with extra teriyaki sauce if desired.
