  • 2 tablespoons butter (30 g)
  • 1 teaspoon dried oregano (5 g)
  • ½ teaspoon crushed red pepper (optional) (2.5 g)
  • 2 cups water or vegetable stock (500 ml)
  • ⅓ cup thickened cream (heavy cream) (80 ml)
  • 250 grams spaghetti noodles (8.8 oz)
  • Salt and pepper to taste
  • Parsley for garnish

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the sliced onion and cook, stirring occasionally, for 8-10 minutes until softened and golden. Season with salt and pepper.
  3. Add the sun-dried tomatoes and cook for another 3-4 minutes, stirring occasionally.
  4. Stir in the butter, dried oregano, and crushed red pepper (if using), and cook for 1 minute until the butter is melted and the spices are fragrant.
  5. Pour in the water or vegetable stock, bring to a boil, then reduce the heat to medium-low and simmer for 15 minutes.
  6. Meanwhile, cook the spaghetti noodles according to package instructions until al dente. Drain and set aside.
