Ingredients
- Noodles: 250g (9 oz) Korean glass noodles (sweet potato noodles, dangmeyon)

- 70g (2.5 oz) spinach
- 1 carrot (100g/3.5 oz), julienned
- 1 capsicum(bell pepper) (200g/7 oz), julienned
- 15 spring onions (100g/3/5 oz), cut into batons
- 20g (0.7 oz) dried shiitake mushrooms, hydrated and sliced
- 1 onion (260g/9 oz), sliced
- Sauce:
- 5.5 tablespoons (80ml) soy sauce
- 1 tablespoon honey
- 1 tablespoon brown sugar
- 1 tablespoon sesame oil
- 1/4 teaspoon black pepper
Instructions
1. Prepare the Sauce: In a small bowl, mix soy sauce, honey, brown sugar, sesame oil, and black pepper. Set aside.
2. Hydrate and Prep Mushrooms and Vegetables:
- Hydrate dried shiitake mushrooms in warm water for about 20 minutes. Once hydrated, slice and mix with 1 tablespoon of the prepared sauce. Set aside.
- While the mushrooms are hydrating, julienne the carrot and capsicum, cut the spring onions into batons, slice the onion, and wash the spinach.
3. Boil Noodles: Bring a large pot of water to boil. Add glass noodles and cook for 7 minutes. Drain and rinse with cold water. Place noodles in a large mixing bowl and toss with the remaining sauce.
4. Cook Vegetables:
- Heat a small amount of oil in a pan over medium heat.
- Cook carrot, onion, and capsicum with a pinch of salt until slightly tender.
- Add mushrooms and cook for a few more minutes.
- Finally, add spring onions and spinach, cooking until spinach wilts.
5. Combine Everything: Add the cooked vegetables to the bowl with the noodles. Mix well to ensure everything is evenly coated with the sauce.
6. Serve: Garnish with sesame seeds if desired. Enjoy warm or at room temperature.
Tips for Making Japchae
Substitutes: if you can't find shiitake mushrooms, you can use any other mushrooms you like. For a vegetarian version, replace oyster sauce with a vegetarian alternative.
