- Add the finely chopped carrot, spring onion, mirin, salt, and sugar to the beaten eggs. Mix well.
- Heat a non-stick frying pan over medium-low heat. Lightly oil the pan.

- Cook until the egg is just set, then carefully roll it up to one side of the pan.
- Pour another thin layer of the egg mixture into the pan, making sure it attaches to the edge of the rolled egg. Repeat the rolling process until all the egg mixture is used up.
