Recipe Details: Garlic Chive Omelette Kimbap
Serving Size: Makes 3 rolls (serves 2-3)
Ingredients:
For the kimbap rolls:
Garlic chives: 90g (3 oz), chopped into 5cm (2-inch) lengths
Lettuce: 6 leaves
Pickled cucumbers: 4, halved lengthwise
Tuna: 1 can (425g/15 oz), drained
Eggs: 4 large
Cooked short-grain rice: 3 cups (600g/21 oz)
Sesame seeds: 1 tbsp (15g)
Sesame oil: 1 tbsp (15mL) + extra for drizzling
Salt: ½ tsp (2g)
Mayonnaise: for drizzling
Seaweed sheets: 3 large sheets
Instructions:
Prepare the rice:
Mix cooked rice with sesame seeds, sesame oil, and salt in a large bowl. Set aside.
Make the garlic chive omelettes:
Whisk eggs in a bowl until well combined.
Heat a rectangular non-stick pan over medium heat and pour in a thin layer of egg mixture to form a rectangular omelette.
While the bottom is cooking, sprinkle chopped garlic chives evenly on top. Flip and briefly cook the other side.
Repeat to make a total of 3 omelettes. Let them cool.
Prep the fillings:
Wash and pat dry the lettuce leaves. Drain the tuna thoroughly and lightly flake with a fork.
Assemble the kimbap:
Place a sheet of seaweed shiny side down on a bamboo rolling mat. Spread a thin layer of seasoned rice evenly over two-thirds of the seaweed sheet.
Lay a whole garlic chive omelette on top of the rice. Add two lettuce leaves, tuna, and pickled cucumber horizontally across the center.
Drizzle a thin line of mayonnaise over the tuna.
Roll the kimbap:
Use the bamboo mat to tightly roll the kimbap, starting from the edge with fillings. Apply gentle pressure as you roll to ensure a firm shape.
Seal the roll by moistening the edge of the seaweed with a little water.
Drizzle and serve:
Brush or drizzle sesame oil over the surface of the rolled kimbap for extra flavor. Use a sharp knife to slice the rolls into bite-sized pieces. Clean the knife with a damp cloth between cuts for cleaner edges. Arrange on a platter and enjoy!
Tips for the Dish:
Ingredient Substitutions: Replace tuna with cooked chicken, tofu, or grilled vegetables for variety. Use gluten-free seaweed and mayonnaise for dietary needs.
Storage Tips: Wrap leftover rolls tightly in plastic wrap and store in the refrigerator. Consume within 24 hours for the best taste.
Make Ahead: Prepare the rice, omelettes, and other fillings in advance and store them separately in the fridge for quick assembly.
Omelette Perfection: Use a rectangular non-stick pan and medium heat to achieve tender and evenly cooked omelettes.
