Ingredients

  • 2 medium red onions, thinly sliced into rings
    (about 450g / 1 lb)
  • 300ml water
    (1¼ cups)
  • 150g white sugar
    (¾ cup)
  • ½ teaspoon salt
  • 150ml white vinegar
    (⅔ cup)
  • 3 bay leaves
  • ¼ teaspoon whole black peppercorns
  • ¼ teaspoon mustard seeds

Instructions

1. Prepare the onions

Peel the red onions and slice them into thin rings using a sharp knife or mandoline. Separate the rings gently. 



2. Make the pickling brine

In a medium saucepan, combine:

  • sugar
  • salt
  • bay leaves
