It’s an easy way to enjoy the flavours of a Korean rice burger without needing any special equipment, and it’s perfect for a satisfying lunch or dinner.

Why You'll Love This Rice Burger Bowl

A rice burger is a popular Korean-style meal where rice replaces traditional bread buns, creating a unique combination of chewy, savoury and satisfying textures. This bowl version takes inspiration from that idea but makes it even easier to prepare and customise.

The key to great flavour is balancing different textures and tastes: spicy and slightly sweet fried kimchi, creamy tuna mayo, salty crispy Spam, melted cheese and nutty sesame rice. Using well-fermented kimchi adds extra depth, while the fried rice layers help hold everything together beautifully.

Key Ingredients

Cooked Rice - The base of the dish, providing a soft and slightly sticky texture that holds all the toppings together.

Roasted Seaweed - Adds a savoury ocean flavour and classic Korean seasoning to the rice.

Sesame Oil - Creates a nutty aroma and enhances the overall Korean-inspired flavour.

Kimchi - Adds spice, tanginess and umami. Frying the kimchi brings out sweetness and deeper flavour.

Sugar - Balances the sourness of fermented kimchi and creates a more rounded flavour.

Tuna - Provides a creamy, savoury filling that pairs well with spicy kimchi.

Mayonnaise - Adds richness and smooth texture to the tuna filling.

Spam - Creates a crispy, salty and savoury layer that works perfectly with rice.

Fried Egg - Adds richness and a delicious golden yolk that blends with the other ingredients.

Instructions

2. Prepare the Tuna Mayo

Drain the tuna completely.

Place tuna into a bowl and mix with mayonnaise until combined.

Heat a frying pan over medium heat.

Cooking temperature guide:

  • Medium heat: approximately 160–180°C (320–356°F)

Add a small amount of oil if needed.

Fry the eggs until the whites are cooked and the yolks are done to your preferred texture.

Using the same pan, cook the Spam slices over medium heat until golden brown on both sides.

This usually takes about 2–3 minutes per side.

If there is too much liquid, lightly squeeze out some kimchi juice.

  3. Add fried kimchi.
  4. Add tuna mayo.

  6. Add crispy Spam.
  7. Add fried egg.
  8. Cover with another layer of seasoned rice.

Gently press the layers together.

Serve immediately and enjoy.

Tips & Substitutions

Use Warm Rice

Warm rice is easier to mix with sesame oil and seaweed, and it helps the layers stick together.

Adjust Kimchi Flavour

The sugar amount depends on your kimchi.

  • Very sour kimchi → add more sugar.
  • Mild kimchi → use less sugar.

Make It Spicy

Add:

  • Gochujang
  • Chilli flakes
  • Spicy mayo

for extra Korean-style heat.

Make It Lighter

Replace Spam with:

  • Grilled chicken
  • Tofu
  • Salmon
  • Extra vegetables

Vegetarian Version

Skip the tuna and Spam.

Try adding:

  • Fried tofu
  • Mushrooms
  • Avocado
  • Extra kimchi

Meal Prep Tip

Prepare the seasoned rice, tuna mayo and fried kimchi ahead of time.

Store ingredients separately and assemble before eating for the best texture.

Gluten-Free Option

Check the labels of:

  • Spam
  • Soy-based seasonings (if adding extra sauce)
  • Kimchi

as some brands may contain gluten ingredients.

Frequently Asked Questions

What is a rice burger bowl?

A rice burger bowl is a Korean-inspired dish that uses seasoned rice instead of bread, layered with savoury fillings and toppings like meat, vegetables, kimchi or egg.

Can I make a rice burger bowl ahead of time?

Yes. Prepare the individual components ahead and store them separately. Assemble just before serving for the best texture.

Can I use leftover rice for this recipe?

Yes. Leftover rice works well. Warm it slightly before mixing with sesame oil, salt and seaweed.

What type of kimchi is best for a rice burger bowl?

Well-fermented kimchi works best because the sour flavour becomes sweeter and deeper when fried.
