The History of the Dish
This versatile condiment draws deep inspiration from traditional Korean seasoned chive dishes (Buchu-yangnyeomjang), which have long been celebrated for their vibrant flavour profile and incredible health benefits. Garlic chives deliver a distinct mild garlic-and-onion bite that pairs naturally with fermented soy sauce and nutty toasted sesame oil. Rich in vitamins A and C, this raw, nutrient-dense sauce is traditionally whipped up during harvest periods to bring an instant punch of brightness to simple staple foods.

Key Ingredients & Their Role
• Garlic Chives ➔ The star base that provides a fresh, peppery, and mild garlic-onion bite.
• Gochugaru (Korean Chilli Flakes) ➔ Adds a signature smoky, sweet warmth and vibrant red hue without overpowering the dish.
• Soy Sauce ➔ The deep, salty, umami-rich liquid foundation that cures and preserves the fresh aromatics.
• Tuna Fish Sauce ➔ Infuses a hidden layers of complex, savoury depth that elevates standard soy dressings.
• Sesame Oil & Seeds ➔ Bring a rich, toasted aroma, velvety mouthfeel, and essential nutty crunch.
• Jalapeno & Bird's Eye Chillies ➔ Introduce a multi-layered heat profile, combining crisp brightness with a sharp, fiery kick.

Ingredients
Fresh Aromatics

  • 300g (approx. 10.5 oz) garlic chives, finely chopped
  • 1 medium brown onion, finely diced
  • 2 green jalapeno chillies, finely chopped
  • 2 red bird's eye chillies, finely chopped
  • 1 large spring onion (white part only), finely diced

The Umami Sauce Base

  • 3 TB gochugaru (Korean chilli flakes)
  • 1 TB minced garlic
  • 1 TB white sugar
  • 6 TB soy sauce
  • 2 TB tuna fish sauce
  • 3 TB toasted sesame oil
  • 3 TB toasted sesame seeds

Ingredient note: Tuna fish sauce means a fish-based seasoning sauce, not canned tuna or tuna in oil. If using a Korean tuna extract such as chamchi-aekjeot, check the label and adjust the quantity to taste because saltiness varies by brand.

Instructions

  1. Prep the fresh ingredients ➔ Wash and thoroughly dry 300g (10.5 oz) of garlic chives. Finely chop the chives into consistent 0.5–1 cm (¼–⅜ inch) pieces to ensure even distribution, then place them into a large mixing bowl.
  2. Dice the aromatics ➔ Finely dice your brown onion, green jalapenos, red bird's eye chillies, and the white part of your large spring onion. Add all of these crisp, vibrant vegetables directly into the bowl with the chopped chives.

  3. Mix the seasoning liquids and powders ➔ Measure and add 3 TB gochugaru, 1 TB minced garlic, 1 TB sugar, 6 TB soy sauce, and 2 TB tuna fish sauce straight into the bowl, stirring gently with a spoon until the sugar fully dissolves and the chives begin to slightly soften under the salt.
  4. Finish with the nutty elements ➔ Drizzle in 3 TB of premium toasted sesame oil and scatter 3 TB of toasted sesame seeds over the top. Give the mixture one final, thorough toss until everything is coated in a glossy, rich crimson marinade.

  5. Store ➔ Transfer to an airtight glass jar for future meals. The finished sauce should be chunky, with plenty of green chives, red chilli and visible sesame seeds.

Tips & Substitutions
Garlic Chive Alternatives
If you cannot find Korean garlic chives at your local Asian grocer, you can substitute them with a mix of standard Chinese chives and regular chives, mixed with an extra clove of minced garlic to mimic the classic peppery flavor.

Fish Sauce Swaps
If you don't have tuna fish sauce on hand, regular premium fish sauce works beautifully. For a fully vegetarian or vegan alternative, substitute the fish sauce with an equal amount of Yondu (Korean vegetable umami seasoning) or a dark mushroom soy sauce.

Storage and Shelf Life
Keep this sauce stored inside an airtight glass container in the fridge. It tastes phenomenal on day one, but the flavours deepen even further after 24 hours; it stays completely fresh and crisp for up to 5 to 7 days.

FAQ
Can I freeze garlic chive sauce?
No, freezing is not recommended. Freezing destroys the delicate cell walls of the raw garlic chives and aromatics, turning them into a mushy, watery paste once thawed.

Is this sauce incredibly spicy?
It has a distinct, lively kick due to the fresh bird's eye chillies. If you prefer a milder condiment, easily control the heat level by removing the seeds from the jalapenos and omitting the red bird's eye chillies entirely.

Why is my sauce too dry?
As the sauce sits in the fridge, the salt from the soy sauce draws out the natural juices of the fresh onions and chives, creating a natural, rich syrup. If it looks a little thick initially, give it an hour to rest and release its liquids.
