This recipe is a testament to the slow cooker's power. The beef becomes incredibly tender, falling apart with every bite. The vegetables - a colorful mix of carrots, sweet potatoes, and regular potatoes - absorb all the delicious flavors of the broth. And the broth itself? It's a symphony in a bowl, rich with the umami notes of beef, the sweetness of tomato paste, and the earthy depth of herbs.






Hearty Slow-Cooked Beef Stew Recipe

Serving Size: 6-8 servings

 

Ingredients:

  •   1 kg (2.2 lbs) diced beef stew meat
  •   1 teaspoon salt
  •   1 teaspoon black pepper
  •   3 tablespoons olive oil
  •   1 large onion, sliced
  •   2 tablespoons minced garlic
  •   4 carrots, cut into 1-inch pieces (2.5 cm)
  •   2 sweet potatoes, cut into 1-inch pieces (2.5 cm)
  •   4 medium potatoes, cut into 1-inch pieces (2.5 cm)
  •   ½ cup all-purpose flour
  •   3 cups (750 ml) beef broth
  •   1 ½ cups (350 ml) red wine
  •   1 tablespoon Worcestershire sauce
  •   3 tablespoons tomato paste
  •   2 bay leaves
  •   2 tablespoons dried thyme
  •   ½ teaspoon Vegeta (or similar seasoning blend)
  •   Salt and pepper to taste

 

Instructions:

  1. Season the Beef: In a large bowl, toss the beef with salt and pepper.
  2. Brown the Beef: Heat the olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Brown the beef in batches, ensuring it gets seared on all sides. Set browned beef aside.
  3. Sauté the Aromatics: In the same pot, add the onion and garlic. Sauté for 3-4 minutes, until softened.
  4. Add the Carrots: Add the carrots to the pot and cook for another 2 minutes, stirring occasionally.
  5. Flour Power: Sprinkle the flour over the onion and carrot mixture and stir to coat. Cook for another minute, allowing the flour to cook out a bit.
  6. Build the Flavor: Add the red wine, Worcestershire sauce, and tomato paste to the pot. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the pot. This allows the alcohol in the wine to burn off and the flavors to concentrate.
  7. Transfer to Slow Cooker: Transfer the browned beef (and any juices) along with the sautéed onion, garlic, and the deglazed wine mixture (scraping up any browned bits) to your slow cooker.
  8. Add Remaining Ingredients: Add the sweet potatoes, regular potatoes, beef broth, bay leaves, thyme, and Vegeta to the slow cooker. Season with salt and pepper to taste.
  9. Slow Cook it Low: Cook on low for 10 hours or on high for 4-5 hours, or until the beef is tender and the vegetables are cooked through.

  • Substitutes: For a gluten-free version, use cornstarch instead of flour to thicken the stew. If you prefer a non-alcoholic version, replace the red wine with additional beef broth.
  • Vegetarian Option: Substitute the beef with hearty vegetables like mushrooms, zucchini, and eggplant. Use vegetable broth instead of beef broth.
  • Enhance Flavor: For an extra depth of flavor, consider adding a splash of soy sauce or balsamic vinegar.
