  1. Preheat your oven to 180°C (350°F). Line two baking sheets with parchment paper.
  2. In a large bowl, beat the egg yolks with half of the sugar until thick and pale. Add the vanilla extract and mix well.
  3. In another bowl, whisk the egg whites with the cream of tartar until soft peaks form. Gradually add the remaining sugar and continue to whisk until stiff peaks form.
  4. Gently fold the egg whites into the yolk mixture. Sift the flour over the mixture and fold it in gently until just combined.
  5. Transfer the batter to a piping bag fitted with a plain round tip. Pipe 3-inch (7.5 cm) long strips, about 1/2 inch (1.25 cm) wide, onto the prepared baking sheets, spacing them about 1 inch (2.5 cm) apart.
  6. Dust the ladyfingers with powdered sugar and bake for 12-15 minutes or until lightly golden and firm to the touch.
  7. Let the ladyfingers cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

  • Substitutes: If you don't have cream of tartar, you can use a few drops of lemon juice or white vinegar to stabilize the egg whites.
