Recipe: Tiramisu
Servings:8-10
Ingredients:
- Coffee Mixture: (makes 1 1/4 cups espresso)
- 6 teaspoons ground coffee
- 2 tablespoons (30ml) Kahlua (or Marsala wine)
- 1 teaspoon sugar
- Other Ingredients:
- 30 Ladyfingers
- 6 large egg yolks
- 120g (1/2 cup) granulated sugar
- 250g (1 cup) mascarpone cheese
- 300g (1 1/4 cups) thickened cream (cold) or heavy cream
- 2-3 tablespoons cocoa powder
- 1 teaspoon vanilla essence
- 2 tablespoons (30ml) Kahlua (for mascarpone mixture)
Instructions:
1. Make Coffee Mixture:
- Brew 6 teaspoons of ground coffee to make approximately 1 1/4 cups of espresso. Add 2 tablespoons Kahlua (or Marsala wine) and 1 teaspoon sugar to the espresso. Set aside to cool.
2. Prepare Egg Mixture:
- Separate the egg yolks from the whites (only yolks are used in this recipe).
- In a large bowl, whisk the egg yolks and granulated sugar by hand until well combined.
- Place the bowl over a pot of simmering water (double boiler) and whisk continuously for 9-10 minutes until the mixture thickens and reaches at least 73°C (165°F). Quickly cool the mixture by placing the bowl in a cold water bath (in a larger bowl with cold water or ice).
3. Prepare Mascarpone Mixture:
- In a medium bowl, beat the mascarpone cheese with 2 tablespoons of Kahlua and 1 teaspoon of vanilla essence by hand until smooth. Do not overbeat.
- Gently fold the mascarpone mixture into the cooled egg yolk mixture.
- In another medium bowl, beat the cold thickened cream with a hand mixer until medium peaks form (about 4-5 minutes). The cream should not be runny.
- Using a spatula, gently fold the whipped cream into the mascarpone and egg yolk mixture.
5. Assemble Tiramisu:
- Dip each ladyfinger into the coffee mixture briefly, ensuring they are fully soaked but not soggy.
- In a serving dish, layer the soaked ladyfingers, followed by a layer of the mascarpone mixture. Repeat the layers until all ingredients are used, ending with the mascarpone mixture on top.
- Sift 2-3 tablespoons of cocoa powder over the top layer.
6. Chill and Serve:
- Refrigerate the tiramisu for at least 4 hours, preferably overnight, to allow the flavors to meld together.
- Serve chilled and enjoy!
Tips for Making Tiramisu
- Eggs: Ensure the eggs are fresh and separate them carefully. Only the yolks are needed for this recipe.
- Substitutes: If you prefer a non-alcoholic version, you can replace Kahlua or Marsala wine with additional coffee or a non-alcoholic coffee liqueur.
