Ingredients

  • 400g spiral pasta (14 oz)
  • 1 tablespoon olive oil (15ml)
  • 1 onion, sliced (about 150g / 5.3 oz)
  • 3 tablespoons tomato paste (about 60g / 2.1 oz)
  • 300ml thickened cream/heavy cream (10 fl oz)
  • ½ cup fresh parsley, chopped (about 15g / 0.5 oz)
  • 1 tablespoon capers, drained
  • 1 tablespoon Dijon mustard
  • 1 can tuna in oil, about 425g / 15 oz, drained
  • 1 can corn, about 400g / 14 oz, drained
  • 2 teaspoons chicken stock powder/chicken bouillon powder
  • 1 teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1½ cups grated cheese (about 150g / 5.3 oz)

Instructions

  1. Preheat the oven.
    Preheat your oven to 190°C / 375°F. Lightly grease a large ovenproof baking dish.
  2. Cook the pasta. 


    Bring a large pot of salted water to a boil. Cook the spiral pasta according to the packet directions until just al dente. Avoid overcooking because the pasta will continue cooking in the oven. Drain well.
  3. Cook the onion.
    While the pasta cooks, heat the olive oil in a large frying pan over medium heat. Add the sliced onion and cook for about 2–3 minutes, stirring occasionally, until softened.
  4. Build the creamy tomato sauce.
    Add the tomato paste and stir for about 30 seconds to cook it slightly and deepen its flavour.
  5. Add the cream and mustard.
    Pour in the cream and add the Dijon mustard. Stir everything together until the tomato paste is evenly incorporated and the sauce becomes smooth.
  6. Add the pasta.
    Add the drained pasta to the pan and gently toss to coat it in the creamy sauce.
  7. Add the tuna and corn.  


    Drain the tuna and corn well. Add both to the pan and gently mix them through the pasta. Try not to break the tuna into tiny pieces; a few larger flakes give the bake a better texture.
  8. Season the pasta.
    Add the capers, chopped parsley, chicken stock powder, garlic powder, salt and black pepper. Stir gently until everything is evenly combined.
  9. Transfer to the baking dish. 


    Spoon the creamy tuna pasta mixture into the prepared ovenproof dish. Spread it into an even layer.
  10. Add the cheese. 


    Sprinkle the grated cheese evenly over the top.
  11. Bake. 


    Place the dish in the preheated 190°C / 375°F oven and bake for about 15 minutes, or until the cheese has melted and the edges are bubbling.
  12. Serve. 


    Let the pasta bake rest for a few minutes before serving. Finish with a little extra fresh parsley if desired.
