Easy and cheesy Sausage and Bean Pasta Bake

This easy sausage and bean pasta bake combines smoky sausages, baked beans, pasta and melted cheese for a hearty, budget-friendly weeknight dinner.

Introduction

This sausage and bean pasta bake is the kind of hearty dinner that turns a few simple ingredients into something seriously comforting. Smoky sausages, baked beans, tender pasta and colourful capsicum are coated in a rich chipotle sauce, then topped with melted cheese and baked until bubbling.

Why This Sausage and Bean Pasta Bake Works

Baked beans bring sweetness and a creamy texture to the sauce, while chipotle in adobo adds smoky heat without needing a long list of spices. The combination of Worcestershire sauce and garlic gives the sauce extra savoury depth.

For the sausages, skinless hot dogs make this recipe particularly quick because they're already cooked and only need to be heated through. You can also swap them for other cooked sausages depending on what you have available.

Key Ingredients & Their Role

  • Skinless hot dogs → Provide a savoury, meaty bite and make this recipe quick to prepare.
  • Baked beans → Create the hearty sauce while adding sweetness, fibre and texture.
  • Short pasta → Acts as the base and soaks up all the smoky sauce.
  • Red capsicum (bell pepper) → Adds sweetness, colour and a little texture.
  • Onion → Builds a savoury aromatic base for the sauce.
  • Garlic → Adds another layer of savoury flavour.
  • Chipotle in adobo sauce → Brings smoky chilli heat and depth.
  • Worcestershire sauce → Adds savoury umami and balances the sweetness of the beans.
  • Grated cheese → Creates the golden, bubbling topping that finishes the bake.

Ingredients

  • 2 cans Plumrose Skinless Hot Dogs, drained (about 375g each / 13.2 oz each)
  • 1 can Heinz Baked Beans, 555g / 19.6 oz
  • 250g short pasta such as macaroni, penne or spirals (8.8 oz)
  • 1 red capsicum (bell pepper), diced
  • 1 medium onion, finely diced (about 150g / 5.3 oz)
  • 1 cup grated cheese (about 100g / 3.5 oz)
  • 1 teaspoon minced garlic (5g / 0.17 oz)
  • 2 teaspoons chipotle in adobo sauce
  • 1 teaspoon Worcestershire sauce (5ml / 0.17 fl oz)
  • 1 tablespoon olive oil or butter (15ml / 0.5 fl oz)

Instructions

  1. Preheat the oven.
Preheat your oven to 190°C / 375°F so it is fully heated when the pasta mixture is ready.
  2. Prepare the ingredients.
Finely dice the onion. Remove the seeds and dice the red capsicum (bell pepper) into bite-sized pieces. Drain the hot dogs and slice them into bite-sized rounds.
  1. Cook the pasta.
Bring a large pot of salted water to a boil. Cook the pasta until al dente, following the packet directions. Avoid overcooking it because the pasta will continue cooking slightly during baking. Drain well and set aside.
  1. Cook the vegetables.
Heat the oil or butter in a large frying pan over medium heat. Add the diced onion and capsicum. Cook for about 4–5 minutes, stirring occasionally, until the onion becomes translucent and the capsicum begins to soften.
  1. Add the garlic, sausages and chipotle.
Add the minced garlic, sliced hot dogs and chipotle in adobo sauce. Stir everything together and cook for 2–3 minutes, until the garlic becomes fragrant and the sausages are heated through and coated in the smoky chipotle sauce.
  1. Build the sauce.

Reduce the heat to low. Add the entire can of baked beans and the Worcestershire sauce. Stir gently to combine. Let the mixture simmer for about 2 minutes, allowing the flavours to come together.
  1. Add the pasta.

Add the drained pasta to the pan. Stir thoroughly so the pasta is evenly coated in the baked bean and chipotle sauce.
  1. Transfer to a baking dish.
Spoon the pasta mixture into a suitable ovenproof baking dish. Spread it into an even layer.
  2. Add the cheese.
Sprinkle the grated cheese evenly over the top.
  3. Bake.

Place the dish on the upper-middle rack of the preheated 190°C / 375°F oven. Bake for approximately 15 minutes, or until the cheese has completely melted, the edges are bubbling and the top is lightly golden.
  1. Rest and serve.

Carefully remove the pasta bake from the oven and let it rest for 3–5 minutes before serving. This allows the sauce to settle slightly and makes it easier to serve.

Tips & Substitutions

Choose your favourite sausage

The Plumrose skinless hot dogs keep this recipe very quick, but you can use other cooked sausages such as frankfurts, kranskys, chorizo or chicken sausages.

If using raw sausages, cook them completely before adding them to the pasta mixture.

Adjust the chipotle

Two teaspoons gives the dish a noticeable smoky flavour with some heat. For a milder version, start with one teaspoon. For more heat, add another teaspoon or a little chilli powder.

Don't overcook the pasta

Cook it just until al dente. Soft pasta can become mushy after another 15 minutes in the oven.

Make it extra cheesy

For a stretchier topping, use a combination of cheddar and mozzarella.

Add more vegetables

Mushrooms, zucchini, spinach, corn or peas can easily be added. This is a particularly good recipe for using up vegetables in the fridge.

Make it gluten-free

Use gluten-free pasta and check that the sausages, baked beans, Worcestershire sauce and chipotle sauce are gluten-free.

Make it vegetarian

Use vegetarian sausages or a plant-based sausage alternative. Check the baked beans and Worcestershire sauce if you need the entire dish to be vegetarian.

Make it ahead

Prepare the pasta mixture and transfer it to the baking dish. Let it cool, cover and refrigerate for up to 24 hours. Add the cheese just before baking for the best result.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat until piping hot.

Frequently Asked Questions

Can I make sausage and bean pasta bake ahead of time?

Yes. Assemble the pasta bake up to 24 hours ahead, cover and refrigerate it. Add the cheese just before baking and allow a little extra time in the oven because the pasta will be cold.

What sausages can I use in sausage and bean pasta bake?

You can use skinless hot dogs, frankfurts, kranskys, chorizo or cooked chicken sausages. If using raw sausages, cook them thoroughly before combining them with the other ingredients.

Can I freeze sausage and bean pasta bake?

Yes. Allow the cooked pasta bake to cool completely, portion it into airtight containers and freeze. Thaw overnight in the refrigerator before reheating.

Can I make this pasta bake less spicy?

Absolutely. Reduce the chipotle in adobo sauce to one teaspoon or leave it out completely. You can add a little smoked paprika instead if you still want a smoky flavour without much heat.

What pasta is best for sausage and bean pasta bake?

Short pasta shapes such as macaroni, penne and spirals work best because they hold onto the thick baked-bean sauce. Avoid very thin pasta shapes, which can become soft during baking.

Wrap-Up

This sausage and bean pasta bake is a great example of how everyday pantry ingredients can become a seriously satisfying dinner. The smoky chipotle, sweet baked beans and savoury sausages work surprisingly well with the pasta, especially once everything is covered in golden melted cheese.

Would you make this with smoky chipotle, or would you leave out the heat and keep it mild?
