Easy Mexican Tomato Rice Recipe | Rice Cooker Method

Make this easy Mexican tomato rice recipe in your rice cooker with tomato paste, butter and lemon. Fluffy, flavorful rice with almost no effort.

Introduction

Want flavorful Tex-Mex style rice without standing over a pot? This easy Mexican tomato rice recipe is made entirely in a rice cooker, using tomato paste, chicken stock, butter, lemon and fresh parsley for a colorful, savory side dish.

Traditional Mexican rice is commonly prepared by cooking rice with tomato and aromatics, but this version takes a much simpler, rice-cooker approach. Tomato paste gives the rice its deep red color and savory base, while butter and lemon added at the end create a richer, brighter flavor. It is especially handy when you want an easy side dish to serve alongside chicken, tacos, beans or a spicy skillet.

 Key Ingredients & Their Role

  • White rice → The fluffy base that absorbs all the tomato and chicken-stock flavor.
  • Tomato paste → Provides the signature red color and concentrated tomato flavor without needing fresh tomatoes.
  • Chicken stock powder → Adds savory depth and makes the rice taste much more seasoned.
  • Butter → Gives the finished rice a rich, silky texture.
  • Lemon juice → Adds acidity and brightness, balancing the richness of the butter and tomato.
  • Fresh parsley → Adds freshness, color and a light herbal finish.

Ingredients

  • 3 cups uncooked white rice (about 600 g / 1.3 lb)
  • Water, enough to reach the 3-cup line in your rice cooker
  • 2 tablespoons tomato paste (about 35 g / 1.2 oz)
  • 1 teaspoons chicken stock powder (about 5–7 g / 0.2 oz)
  • 1½ tablespoons butter (about 20 g / 0.7 oz)
  • 1 tablespoons lemon juice (about 22 mL / 0.75 fl oz)
  • ½ cup fresh parsley, finely chopped (about 15 g / 0.5 oz)

Instructions

1. Wash the rice

Place the white rice in the rice cooker bowl and rinse it several times until the water becomes noticeably clearer.

Drain the rice well.

2. Add the water and seasonings

Return the drained rice to the rice cooker bowl.

Add enough water to reach the 3-cup marking inside your rice cooker.

Add the tomato paste and chicken stock powder.

Using a spoon or rice paddle, stir thoroughly until the tomato paste completely dissolves into the water.

The liquid should turn a rich reddish-orange color.

Tip: Make sure the tomato paste is well mixed before starting the rice cooker so you don't end up with concentrated pockets of tomato paste.

3. Cook the rice

Close the rice cooker lid and start the normal white-rice cooking cycle.

Let the rice cooker cook according to your machine's normal program.

There is no need to stir the rice while it cooks.

4. Add the finishing ingredients

When the rice cooker switches from Cook to Warm, open the lid carefully.

Immediately add the butter, lemon juice and chopped fresh parsley.

Spread them over the hot rice.

5. Fluff the rice

Using a rice paddle or fork, gently fluff and fold the rice.

Mix until the butter has melted and the lemon juice and parsley are evenly distributed.

Avoid aggressively stirring or mashing the rice, as this can make the grains sticky.

6. Rest for 10 minutes

Close the rice cooker lid again and leave the rice on the Warm setting for another 10 minutes.

This short resting period allows the rice to finish steaming while the butter, lemon and parsley settle into the grains.

7. Serve

Open the lid, give the rice one final gentle fluff and serve hot.

For a complete meal, serve it with your One Pot Mexican Sausages and Rice-style flavors, grilled chicken, chipotle chicken, beans or your favorite Mexican-inspired skillet.

Tips & Substitutions

Use the rice cooker's water line

Because rice cookers vary, use the 3-cup marking inside your own rice cooker rather than measuring a fixed amount of water.

Don't skip the tomato-paste mixing

Tomato paste needs to be dissolved into the water before cooking. This helps distribute the color and flavor evenly.

Add the butter after cooking

Adding butter at the end gives the rice a richer texture and keeps its flavor more noticeable.

Fresh parsley works best

Fresh parsley gives the finished rice a bright, fresh flavor. If necessary, you can substitute fresh coriander/cilantro for a more traditionally Mexican-inspired herbal finish.

Make it spicy

Add a little chilli powder, cayenne pepper, chipotle powder or finely chopped jalapeño for extra heat.

Make it vegetarian

Replace chicken stock powder with a vegetable stock powder.

Make it vegan

Use vegan butter and vegetable stock powder.

Gluten-free

Rice is naturally gluten-free, but check the label of your chicken stock powder to make sure it is certified or labelled gluten-free.

Storage

Cool leftovers promptly and store them in an airtight container in the refrigerator. Reheat thoroughly before serving.

FAQ

Can I make Mexican rice in a rice cooker?

Yes. This recipe is specifically designed for a rice cooker. Simply combine the washed rice, water, tomato paste and stock powder before starting the normal cooking cycle.

Can I use tomato sauce instead of tomato paste?

You can, but the amount of liquid will change, so it isn't a direct one-for-one substitution. Tomato paste is recommended because it provides concentrated tomato flavor without adding too much extra liquid.

Can I make this Mexican rice spicy?

Absolutely. Add chipotle powder, chilli powder, cayenne pepper or chopped jalapeño before cooking for a spicy version.

Can I use cilantro instead of parsley?

Yes. Fresh cilantro/coriander is an excellent substitution and gives the rice a more distinctly Mexican-inspired flavor.

Can I make Mexican rice ahead of time?

Yes. Cook the rice ahead, cool it promptly and refrigerate it in an airtight container. Reheat thoroughly before serving.

Wrap-Up
