• 2 carrots, shredded (about 200 g / 7 oz) 

• 4 pickled cucumbers, halved lengthwise 

• 1 ripe avocado, sliced 

• 8 lettuce leaves

• 200 g sliced ham

  4. In the same pan, lightly cook the carrots with a pinch of salt until just tender. Set aside. 

  5. Place one nori sheet shiny side down. Spread a small amount of rice along one short edge and attach a second nori sheet to create a double layer.
  6. Spread rice evenly over the lower nori sheet, leaving a 2 cm (1 inch) border at the top.
  7. Layer lettuce, egg, zucchini, carrot, avocado, rolled ham (4 slices per roll), and pickled cucumber. 

  8. Roll tightly using a bamboo mat, pressing gently to secure the filling. 

  9. Brush the outside lightly with sesame oil and slice into even pieces using a sharp knife.
